Tempura is too crunchy it was more of a sticky sauce, it built up enough around the chicken or fish in a thick sticky sauce, the meat was in small pieces and the sauce/batter was very thick around the chicken, knobbley it parts.

In Thai cooking, how much of a difference does it make to use Soy Sauce instead of Fish Sauce? I have lived in Thailand for 2 years and have eaten my share of Thai food!.........LOL I notice in Thailand Thais use fish sauce instead of Soy sauce. Now I am back in the States. When I cook Thai food, since I have Soy sauce available in my house I use it instead. I could always go to the store and buy a bottle of fish sauce, but in my opinion why bother since I have Soy sauce? (which contains plenty of sodium as it is!). Am I robbing my Thai dishes of flavor? or it does not make that much of a difference? I would appreciate it if Thai people could answer this as well. Kap Kun Krap! Thanks.

Do they use Tofu (bean curd) in real Thai cooking? What does it mean to "chow" when cooking Thai food in a wok? I'm specifically looking for a recipe to replicate the "Volcanic Beef" dish at Osha Thai in San Francisco. Clearly it does not mean, "eat."

Thai cooking - Egg shells as an ingredient? I've got an excellent book on authentic thai cooking that I just can't wait to use. As with many cookbooks, I read this one cover to cover to find out what was in it and get a feel for the themes of thai cooking - what veggies, seasonings or meats they use predominately. A couple of the recipies involve crushing eggshells and mixing them with other ingredients and sort of steeping them in hot water and then straining the juice off to use in the dish. My question is: What job do the eggshells perform in the dish - do they add a flavor or do they do something for consistency (and if so, how does it work scientifically?) . Thanks !

How to stop/reduce Thai cooking smell? My Thai neighbours cook & eat (in summer) on the balcony, which's next to my bedroom and they cook late, 9pm or later. The cooking smell is always the same. By the time I got ready to sleep, my bedroom stinks of fish sauce & shrimp/fish paste. It stinks & sometimes they are still/just started cooking while I'm trying to sleep. Closing the windows doesn't seem to help, the odours still seep through. I like Thai foods, but I don't want to smell fish sauce & shrimp/fish paste at bedtime. What is a good, natural way to stop/reduce the smell?
Does anyone know how to cook the Thai dish "garlic and black pepper chicken"? There are no recipes online.? I just can't tell what's in the sauce when I go to the Thai restaurants. One waitress told me it had sixteen ingredients but it is just a thin brown sauce. Maybe that's true, although it seems extensive. Does anyone know much about Thai cooking to guide me?

Thai recipe calls for marinating chicken but no liquid is listed? I am preparing Gai Yang Esan for our foriegn exchange student. The recipe calls for marinating the chicken in the ingredients listed. But they are all dry ingredients. Do I just rub the chicken in the ingredients and then leave them sit together or is there a liquid common to Thai cooking that I am unaware of. I am new to Thai cooking and I am using a fairly advanced cookbook. Our student is a little home sick so I want this right.

Has anyone tried to cook thai food at home? I need some help. I cooked vegetables in thai red curry. But did not taste good. Every ingredient was added as per the instructions. This is what i did: Added two tbsp of red curry paste. Then added coconut milk and cooked it for 2 mins. After that added two cups of water and cooked for 5 mins. After this I added the frozen pack of stir-fry vegetables and cooked it for 10 mins. Then added fish sauce. can anyone please tell me what went wrong?

Only Asian thing I've done before was sautéing bok choy with spices, which turned out perfect. Yes, Miso is Japanese... I'm doing an Asian mix 'cause I'm crazy like that. ^-^ So, yeah... basically just asking about the Curry. I would think it'd be a hard dish to do. I'm not sure. I didn't get to these responses before I did the curry. (I skipped the miso for another time.) It came about nearly perfect, actually. I have browsed through the internet for this recipe and i discover that the ingredients used are the same as for other fried rice like Chinese style, saved for fish sauce and limes. any body have a really great thai recipe out there? im awesome at cooking, but i need the right recipe! im interested in cooking thai food, and the thai restaurant i love makes this really tender yellow chicken curry w/ poetatoes and carrots and of course chicken...and they also make this reeally good sweet and sour sauce with their sweet sour fish. they also make really good thai chicken cashew/ beef cashew nut dish!!! i look up thai recipes, but it doesn't taste the same. i look up stuff from EVERYWHERE. any one have a tried and true thai recipe? please share!
