I have a tamarind problem in my Pad thai recipe? Most of the recipes for Pad thai calls for tamarind, but i couldn't find it before. i finally found tamarind in an Indian store. One was a block of black tamarind wrapped in plastic. Second was a small jar of tamarind concentrate which was very dark black. Third was a jar of tamarind sauce made by Knorr. This one was red. I thought this was very stange indeed, b/c I've eaten pad thai before and it usually had a reddish color to it. But the tamarind i've found here is all black except the tamarind sauce from Knorr. i bought the tamarind concentrate, and now i think i made a mistake by buying this. Did I buy the right thing?? I read somewhere tamarind is supposed to be red not this dark black sauce. how am i supposed to use this black tamarind concentrate? would it make my pad thai very black? I want to make a really good pad thai something that is more suited to my palette. I don't like the heavy thick pad thai sold in my local thai places.

Thai recipes without peanuts or coconut? I used to go to this little Thai restaurant and they had what they called "Jungle Curry". That was just their name for it but they said it was a very common dish in Thailand as a different name that I can't pronounce. It was a delightful, spicy, red curry served with rice that did not have any peanuts or coconut in it. No matter where I look all I can find are recipes with coconut. Why is it that everyone thinks to be Thai it has to have peanuts or coconut?? Anyways, does anyone happen to have a recipe for this red curry with no coconut? It was made with shrimp but of course you can put anything in it. Or other recipes for Thai food that do not contain peanuts or coconut. PLEASE, I'm desperate. I moved away from that restaurant and haven't been able to find another authentic Thai restaurant since! Not plain rice Cory, lol Thanks guys! You really jumped on this one pretty quickly! I like the spiciness of the curry so if anyone could find a spicy recipe too that would be awesome!!
Anybody good with Thai recipes? I'm dying to figure out how to make this Thai dish. I used to order it at a restaurant by my old work but can't find the recipe anywhere. It was basically chicken with bamboo & basil in a creamy curry sauce served over white rice. The sauce was NOT red, it was like yellow but I think they call it green curry? I keep finding recipes for the red curry sauce & that's not it. Also, where do you get bamboo? And how do you cook it? I've never cooked any type of Thai food before. Thanks! I found a recipe & it even has a video: http://thaifoodcast.com/recipes/green-curry-chicken/2-main-course/4-green-curry-chicken.html
(Indian or even Thai recipes) Rice or chicken with curry and masala sauce? Hello there, I was looking for any nice recipes for Bhutan rice, or any sort of curried, masala sauce I could put over chicken or serve over jasmine rice. I would appreciate it a lot. There are no Indian-food restaurants within about 3.5 hours of where I live, and would love be able to at least make some. I have also had some similar Thai dishes made with a similar effect to an Indian dish before, which was lovely. I have a large array of spices so at lease that is not an issue. I have tried some recipes before, but would really like some ones on making common sauces or dishes for my husband and I. Thank you greatly.
Thai recipe calls for marinating chicken but no liquid is listed? I am preparing Gai Yang Esan for our foriegn exchange student. The recipe calls for marinating the chicken in the ingredients listed. But they are all dry ingredients. Do I just rub the chicken in the ingredients and then leave them sit together or is there a liquid common to Thai cooking that I am unaware of. I am new to Thai cooking and I am using a fairly advanced cookbook. Our student is a little home sick so I want this right.
