Recipes please for authentic Thai green curry? Pleeease don't say buy sauce in a jar - I don't want fast food muck, I want to know how the Thais cook it!
Thai recipes without peanuts or coconut? I used to go to this little Thai restaurant and they had what they called "Jungle Curry". That was just their name for it but they said it was a very common dish in Thailand as a different name that I can't pronounce. It was a delightful, spicy, red curry served with rice that did not have any peanuts or coconut in it. No matter where I look all I can find are recipes with coconut. Why is it that everyone thinks to be Thai it has to have peanuts or coconut?? Anyways, does anyone happen to have a recipe for this red curry with no coconut? It was made with shrimp but of course you can put anything in it. Or other recipes for Thai food that do not contain peanuts or coconut. PLEASE, I'm desperate. I moved away from that restaurant and haven't been able to find another authentic Thai restaurant since! Not plain rice Cory, lol Thanks guys! You really jumped on this one pretty quickly! I like the spiciness of the curry so if anyone could find a spicy recipe too that would be awesome!!
Thai food--I'm entering a contest "so you think you can cook"? Hi. I'm going to enter this contest at the place where I take cooking classes. You come with your own ingredients, cook in front of and serve judges. You may bring meat that is already cooked (or marinated) for time reasons. My home "specialty' is Thai food and I have tons of authentic recipes, but I can't decide!! I am allowed one large dish or bowl for serving each person and 45 minutes time. What Thai dish would most impress you and make you think it was interesting and unique? Thanks!! I need an authentic Thai beef salad recipe? So my husband is Laotian and Thai. His mom makes some really good Thai food. I especially like it cause she makes it really spicy ;]! Anyways, even though she makes really good food, she never makes Thai Beef Salad. She makes a version of it but it's made with seafood and it's ok but I'm not crazy about it. Anyways, if anyone could give me a recipe and please be specific about brands and amounts because I am not asian and if you tell me to get some fish sauce I will not know which kind. Lol! Oh an could you also tell me how to cook the sticky rice! I mean the Yam Neua, no the Laab ;]
I entered a contest "so you think you can cook" thai food? Hi. I cook a lot of Thai food and went to some cooking classes in Thailand. I get good reviews from friends, but who know what the contest folks will think!? What Thai dish would you find most interesting and impressive? I have a lot of authentic recipes and will tweak them to be original, but I can decide where to start. It has to be a single dish that can be done in 45 minutes. I prefer something with shrimp as this is near the ocean and good fresh is available. Thanks for opinions!! Can anyone recommend some good Asian cookbooks? I am looking to buy a good cookbook with really tasty, authentic Asian recipes. I love Vietnamese and Thai especially. I am also looking for dishes from Indonesia and Singapore. I am moving to a little place without good restaurants and I will need to cook these dishes myself. I eat mostly vegetarian food. I like all kinds of Asian food. If you know of good cookbooks that you know have great recipes, please share! Thanks!!!
Is there a place I can look for a variety of accurate recipes in eastern cuisine? I don't know that I'm looking for historically authentic, but I wouldn't mind some authentic recipes. What I'm looking for is a recipe that doesn't just get CLOSE to, for example, lo mein... I want a recipe that tastes like I ordered it from a Chinese food restaurant in new york. No, I guess that's not "real" Chinese food... just like a Pizzaria isn't "real" Italian food. But I know the stuff you get at restaurants in America are at the very least fast. Most Indian, Japanese, Thai, and Vietnamese places are not only fast but extremely healthy too! That's why I want to learn it. I love the taste, and I want to know what goes into it! I know that there is a LOT of technique in the cooking. Like velveting meat before you cook it (using a corn starch + egg white slurry to tenderize the meat)... but I'm not just looking for one or two hints. I want a cook book of ideas... or even better, a web site! Not just Chinese, as I said, Eastern in general!... I'm kind of confused that places like www.allrecipes.com has little to NOTHING that's even close to eastern cuisine. Thanks for your help.

I would love to have chinese, scechwan, thai or vietnamese etc. recipes, sort of like what we eat at buffets or fast food. particularly beef and broccolii those egg rolls that are round ( cylinder shape ) and open on the ends. won ton soup chicken balls etc... I know it is not authentic asian cooking but I just love it so much.... thank you so much

What are your favorite cookbooks and chefs? First tell me some of your favorite cookbooks/chefs and why. Then if you can think of any books to fill in my blanks below that would be awesome! And any links to good websites or forums about various cuisines would also be awesome. I collect cookbooks that have history and context along with good recipes. Since they are so expensive I do not like wasting money on fad cookbooks or celeb books (mainly Food Network). For general cooking and techniques I turn to America's Test Kitchen. I have many of their books and love them all. But I really like books by chef's who are leaders in their field of cuisine best. So here ten of my favorites in no order. Authentic Mexican - Rick Bayless Lidia's Italian Table/Lidia's Italy - Lidia Matticchio Bastianich Cooking With Claudine - Jacques Pepin Julia Child - The Way To Cook & The Art Of French Cooking Vegetarian Everyday - Deborah Madison Chez Panisse Fruits - Alice Waters The Chinese Kitchen - Eileen Yin-Fei Lo Kitchen Conversations & The Mediterranean Kitchen - Joyce Goldstein The Tassajara Bread Book - Edward Espe Brown Bobby Flay's Burgers, Fries, and Shakes - Bobby Flay What all these chef's do in their books is give background history of the food or recipe and they are experts in their field of cuisine. They also manage to make it all fairly no fuss for the home cook meaning the either don't use a lot of hard to find items or they provide alternatives. In other words there is more to read than just recipes. I must confess I have Mark Bittman's 'How to Cook Everything' and I find the it is too much and too big. It feels like he is trying to do too much instead of mastering one thing really well. I have cooked from it but the dishes are fine but it just feels to pretentious and the sort of depth of knowledge on specific cuisines I expect from from my chefs.
